Urban Nature is a Tasting Menu in 6 courses that will make you travel the world through textures and flavors that have been carefully studied. It is only made to order 72 hours in advance and for a minimum of 2 people.

Let yourself be recommended by our staff for your perfect pairing.

Carpacio of radishes with tiger's milk and wasabi mayonnaise, served with

Crispy mustard and forest kale sprouts with roasted peanuts and mini pansies

violets.

Hass avocado tartar, fresh mango marinated with siracha sauce and tuna tomato,

an original tomato transformed into "Red Tuna" with a process of 72 hours of work.

Roasted red endives in clarified vegan butter, gratin bechamel and fresh pomegranate.

On land of black olives and mini yellow pansies.

Crispy mini baos filled with crispy lotus root, glazed bimis with teriyaki sauce, lemon grass

and sweet chilli mayonnaise.

Chanterelle ragout: wild mushroom stew (according to market), baby carrots, vitelotte potato

and brandy shallots. Baked at low temperature and served with crunchy parsley.


Caramelized cheesecake, served with mango ganache and roasted pineapple.

Pisco Barsol Quebranta, palo santo cordial, cucumber water and vegetable egg whites.
